Recipe - ZofTillas

Zoffix goin' Mexican

Dinner plans went South when the store was out of pizza dough, so I grabbed a bag of "corn tortillas" for the first time in my life. Here's what happened...

Ingredients

  • 1 pack of "corn tortillas" - the package is virtually all in Spanish so all I can say is that there were about 40-50 5" tortillas in it.
  • about 150g of butter
  • 4 slices of white bread
  • about 500g of ground beef
  • about 500g of ground pork
  • A cup of "Alphabet" pasta - this is where all of these look like letters. If you don't have this amazing pasta, get the one that looks like rice, use rice instead, or just ignore this ingredient.
  • Half a huge white onion or just one regular
  • 3 eggs
  • Salt and spices to taste

Nothing special here. Melt some butter into a frying pan and fry each tortilla until golden brown. Keep melting more butter as needed.

Filling

Take a pot, preferably with the non-stick surface. Put beef and pork, salt, spices, bread and chopped onions into the pot. Add water to cover everything and let it cook on high heat. During this time you can fry the tortillas.

Once the meat is ready. Add the cup of our pasta.

Now, the goal is to evaporate all water. If you have a large-enough frying pan, do it in it; otherwise, do it like I did - right in the pot - the pro way :). When the water is nearly all gone, add the eggs and stir vigorously.

It's OK to still have some water left. The goal mostly is so the filling is not completely liquid for it to not to leak from the ZofTillas.

Final Product

Let the filling cool a bit, and our dish is complete. Either serve the filling right on top of flat tortillas or make a wrap!
